Grilled Mediterranean Lamb Skewers

Ingredients:

For the Lamb Skewers:

  • 1.5 lbs boneless lamb leg or lamb shoulder, cut into chunks
  • 1 zucchini, sliced into rounds
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • Cherry tomatoes
  • Wooden skewers, soaked in water for 30 minutes

For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh mint, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Juice of half a lemon

Instructions:

  1. Prepare the Marinade:

    • In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.
  2. Marinate the Lamb:

    • Place the lamb chunks in a large bowl. Pour the marinade over the lamb and toss to coat evenly. Let it marinate for at least 30 minutes.
  3. Preheat the Grill:

    • Preheat your grill or grill pan to medium-high heat.
  4. Assemble the Skewers:

    • Thread the marinated lamb chunks, zucchini, bell peppers, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating the different ingredients.
  5. Grill the Skewers:

    • Grill the skewers for about 10-15 minutes, turning occasionally, or until the lamb is cooked to your desired doneness and has a nice char.
  6. Prepare the Tzatziki Sauce:

    • In a bowl, combine Greek yogurt, diced cucumber, minced garlic, chopped fresh mint, olive oil, salt, pepper, and lemon juice. Mix well.
  7. Serve:

    • Serve the Grilled Mediterranean Lamb Skewers with a side of Tzatziki Sauce for dipping.
