Grilled Mediterranean Lamb Skewers
Ingredients:
For the Lamb Skewers:
- 1.5 lbs boneless lamb leg or lamb shoulder, cut into chunks
- 1 zucchini, sliced into rounds
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Cherry tomatoes
- Wooden skewers, soaked in water for 30 minutes
For the Marinade:
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
For the Tzatziki Sauce:
- 1 cup Greek yogurt
- 1/2 cucumber, finely diced
- 2 cloves garlic, minced
- 1 tablespoon fresh mint, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Juice of half a lemon

Prepare the Marinade:
- In a bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, dried thyme, salt, and pepper to create the marinade.

Marinate the Lamb:
- Place the lamb chunks in a large bowl. Pour the marinade over the lamb and toss to coat evenly. Let it marinate for at least 30 minutes.

Preheat the Grill:
- Preheat your grill or grill pan to medium-high heat.

Assemble the Skewers:
- Thread the marinated lamb chunks, zucchini, bell peppers, red onion, and cherry tomatoes onto the soaked wooden skewers, alternating the different ingredients.

Grill the Skewers:
- Grill the skewers for about 10-15 minutes, turning occasionally, or until the lamb is cooked to your desired doneness and has a nice char.

Prepare the Tzatziki Sauce:
- In a bowl, combine Greek yogurt, diced cucumber, minced garlic, chopped fresh mint, olive oil, salt, pepper, and lemon juice. Mix well.
