Bacon-Wrapped Avocado Egg


  • 2 ripe avocados, halved and pitted
  • 4 eggs
  • 8 slices of bacon
  • Salt and pepper, to taste
  • Chopped chives or parsley (optional, for garnish)


  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).
  2. Prepare the Avocados:

    • Slice each avocado in half and remove the pit. If necessary, scoop out a small portion of the flesh to create a larger well for the egg.
  3. Wrap the Avocado with Bacon:

    • Carefully wrap each avocado half with 2 slices of bacon, ensuring that the bacon covers the entire outer surface.
  4. Place Avocado on Baking Sheet:

    • Place the bacon-wrapped avocados on a baking sheet lined with parchment paper or a baking mat.
  5. Crack an Egg into Each Avocado:

    • Gently crack an egg into the well of each avocado half.
  6. Season and Bake:

    • Sprinkle salt and pepper over the eggs according to your taste preferences.
    • Bake in the preheated oven for 15-20 minutes or until the bacon is crispy, and the eggs are cooked to your liking. Keep in mind that the eggs will continue to cook slightly after you remove them from the oven.
  7. Garnish and Serve:

    • If desired, garnish with chopped chives or parsley for added flavour.
    • Serve immediately while warm.
